From Gourmet Panino to Full Trattoria

La Farcia started life as a gourmet sandwich and focaccia counter built by chef Flavio Ghigo around his native Cuneo cooking. The Via Bertola address, in the Quadrilatero Romano near Piazza San Carlo, took that idea further and turned it into a full trattoria — letting Ghigo cook the traditional Cuneese dishes that first inspired the project.

Expect vitello tonnato, battuta al coltello, ravioli del plin and tajarin on the trattoria side, with the counter's handmade filled focacce still available for something lighter. A deli-style preparation counter facing the room keeps the artisanal, hands-on feel of the original concept.
